Tuscan Herb-Crusted Pork Loin

This Tuscan-inspired pork loin is not only easy to prepare but also perfect for making delicious leftovers, especially for sandwiches. If your pot is large enough, feel free to add chunky vegetables like carrots, potatoes, apples, or butternut squash to the mix. Just ensure they’re cut into large pieces, so they cook evenly with the pork.


Ingredients:

  • 1 boneless pork loin (about 2 pounds), tied and generously seasoned with salt

  • 5 tbsp extra virgin olive oil

  • 1 tbsp fresh rosemary, chopped

  • 2 tbsp fresh sage, chopped

  • 4 garlic cloves, minced

  • 2 bay leaves

  • 1 cup dry white wine

  • Salt and freshly cracked pepper


Instructions:

  1. Preheat the Oven: Set your oven to 375°F (190°C).

  2. Prepare the Herb Mixture: In a mortar and pestle, combine the rosemary, sage, and 3 tablespoons of olive oil. Grind until well mixed.

  3. Sear the Pork: Heat the remaining 2 tablespoons of olive oil in a large oven-safe pot over medium-high heat. Place the pork loin in the pot, starting with the fat side down, and sear on all sides until browned. Use wooden tongs to turn the pork, avoiding metal utensils to keep the sear intact.

  4. Prepare Vegetables: Remove the pork from the pot and set it aside on a cutting board. Reduce the heat to medium. If you’re adding vegetables or fruit, now is the time to do so. Toss them in the rendered pork fat and olive oil in the pot, adding a pinch of salt to season.

  5. Herb-Coat the Pork: Place the bay leaves on the side of the pork loin without fat. Coat the pork with the prepared herb mixture, reserving a small amount for serving.

  6. Roast the Pork: Return the pork to the pot, fat side down. Season with freshly cracked pepper. Transfer the pot to your preheated oven and roast for 45 minutes.

  7. Add Wine and Finish Roasting: After 45 minutes, pour the white wine into the pot. Continue roasting for an additional 10-20 minutes, or until the pork reaches your desired internal temperature.

  8. Rest and Serve: Remove the pork from the pot and let it rest on a cutting board for at least 5 minutes. Reserve the flavorful cooking liquid to serve alongside the pork, along with the leftover herb mixture.

  9. Slice and Enjoy: Slice the pork loin and serve with your favorite sides, using the reserved cooking liquid as a sauce.
