Domaine du Bouchot, perched atop a serene hill in the Loire Valley’s Saint-Andelain, is a winery that encapsulates the essence of terroir-driven winemaking. Specializing exclusively in white wine, this estate is a beacon for those in search of authentic and vibrant Pouilly-Fumé.
I first encountered the precision behind Domaine du Bouchot’s wines at Millésime Bio, a renowned organic wine trade show held every year in Montpellier, France. It was there that I met Pascal and Rachel Kerbiquet, the dedicated duo behind this biodynamic and organic estate. Their wines left an impression on me—so alive, fresh, and full of character. The vibrancy of their wines practically leapt out of the glass, with each sip more invigorating than the last. Some of the finest Pouilly-Fumé I’d ever tasted, and I knew I had to experience the place where these wines were born.

Arriving at the winery, I was greeted by stunning views. Domaine du Bouchot sits atop a gentle hill, its vineyards cascading below in neat rows that stretch out towards the horizon. It was winter, and although some would say less beautiful, it gives one a better lay of the land when it comes to vineyards. The old farm, converted into a winery in 1966, retains its rustic charm while standing as a testament to the evolution of winemaking in the region. The transformation of this humble farm into a pioneering estate is mirrored in the care they put into each bottle. The winery, like the wines, feels rooted in tradition but is alive with modern energy.

Since 2004, Domaine du Bouchot has been certified organic and biodynamic, a reflection of Pascal and Rachel's commitment to sustainability and their deep respect for the land. They take great pride in expressing their terroir, and this is evident in their approach to winemaking. Each of their five cuvées tells a unique story of the land from which it comes. Four of these are Pouilly-Fumé, made from Sauvignon Blanc, while the fifth is a standout Chasselas, a lesser-known variety that nonetheless shines under their careful guidance.
What truly sets Domaine du Bouchot apart is how they harness the individuality of their vineyard sites. Their largest production wine, the Cuvée Domaine du Bouchot, comes from 11 hectares of Kimmeridgian marl soil—a soil rich in marine fossils that imparts the iconic flinty, mineral-driven notes for which Pouilly-Fumé is known. The wine bursts with flinty, grassy aromas, classic traits of the appellation. But it’s the length of the wine that surprised me most—its persistence on the palate, inviting sip after sip, was truly remarkable. This quality carried across all of their cuvées, each one a reflection of the specific plot from which it was sourced.

Walking through their cellar, I could see the precision and care that goes into the winemaking process. The stainless steel tanks lined up, each vessel holding the future of these captivating wines, ready to be bottled and shared. You could feel the energy of the place—clean, efficient, and with a deep respect for the craft. The environment was as alive as the wines themselves.

As I reflect on my visit, it’s clear that Pascal and Rachel Kerbiquet have crafted something extraordinary here. Their wines are not just delicious—they are alive, dynamic, and bursting with character. Each glass of their Pouilly-Fumé is a journey through their terroir, a conversation with the land that they have so carefully nurtured. And while their Cuvée Domaine du Bouchot may be their flagship wine, each of their cuvées offers a unique snapshot of the Loire Valley’s incredible potential for producing world-class Sauvignon Blanc.
